the secret recipe....
today i finally made grams' legendary sticky buns, with swedish ingredients... which made the recipe even more secret! i'm not even sure how to re-create it again! the yeast was the compressed kind, and i have no idea if the conversion was correct. i also have no idea how much butter i actually added, although i do know that i didn't add enough at first, so i decided to add a bit more later... when the dough had already been kneaded and risen. (i'm sure grams is cringing at this!) brown sugar is also very different, it's much more dry... i don't think it's made with molasses here. and finally, the light corn syrup smelled vaguely of B.O. (yes, that B.O.) so i added about 7 teaspoons of vanilla sugar to change the flavor! magically- or maybe i just am a briliiant baker- they turned out great! light, fluffier than usual, and more buttery as well (haha) which is not such a bad thing :) one batch i will bake tomorrow, deciding to let it follow the proper cold rise overnight recipe... the one today i refridgerated 6 hours and then jumped the gun by sticking them in a warm oven for a half hour to get them to the right size! but no worries everyone back home- i will stick to the original recipe in boise! but here... you just gotta 'make it work', as tim gunn (who's not a baker) says. make sure to check out the video of charlie dancing at the very bottom of this page... we recorded this in sälen, and it's a pretty typical sight around here! x.
